Roger Mooking’s fresh tomato galette

RMTTart1Are you on Instagram? I am. And it will come as no surprise to you that, just like my Pinterest feed, it is full of food pictures.

One picture that recently caught my eye was one posted by Canadian chef and recording artist Roger Mooking, whom I first heard of from watching Chopped Canada.

RMTTart2The picture in question was that of a beautiful tomato galette. Do I need to say I was drooling just watching the picture? Not to mention that it looked super easy to do and a great summer dish too.

So of course I had to try it, and of course I couldn’t follow the recipe to a T. But you know what? I didn’t matter because when Roger Mooking said on Twitter that he liked my version, I was pretty happy.

So without further ado, here’s the recipe. I hope you enjoy it as much as I did. Let me know!

Serves 4

  • 1 sheet puff pastry
  • 5 tomatoes
  • 1 tsp dry thyme
  • 1 tsp mustard powder
  • 3 tbsp panko or breadcrumbs (I used panko)
  • 3 tbsp freshly grated Parmesan
  • 1 egg, beaten

Preheat your oven to 200°C/400°F.

Slice the tomatoes to 0.5cm/¼ in. thickness and set aside.

In a bowl, combine 2 tbsp grated Parmesan with the thyme and mustard powder.

Line a baking tray with parchment paper and lay your puff pastry.

Spread 2 tbsp panko or breadcrumbs, leaving about 4cm/1½ in. of the border uncovered.

Sprinkle the Parmesan/mustard/thyme evenly mix on top.

Starting at the centre, place the tomato slices in circles overlapping each other.

Sprinkle the remaining breadcrumbs and Parmesan on top, season with a little pepper if you like, and carefully fold the leftover dough over the tomatoes.

Brush the galette with the beaten egg and bake for about 30-40 minutes or until the dough is cooked through and golden brown.

Allow the galette to cool down slightly before decorating with fresh basil leaves, and serve. Roger Mooking suggests serving with crème fraîche, but I’m partial to a nice side salad.
